Ginger Bread Cookies

One of my favorite winter treats have always been ginger bread cookies. Last week I made my first batch of VEGAN gingerbread cookies since going vegan last march. They were delicious. Here is the recipe I came up with.

Ingredients:
1/3 cup softened vegan margarine
3/4 cup sugar
1/4 cup molasses
1/4 cup vanilla soymilk

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon each ground nutmeg, cloves and cinnamon
1 1/2 teaspoons ground ginger

Directions: Preheat the oven to 350F. Beat together the margarine and sugar in a large bowl. Add the molasses and soymilk and blend.

In a separate bowl mix the dry ingredients together.

Add the dry ingredients to the wet ingredients and mix until thoroughly combined. Lightly grease or cover your cookie sheets in baking parchment. Roll out your dough so that it is slightly less than 1/4 inch thick. Cut out ginger people with your cookie cutters and place on cookie sheets. Bake for about 10 minutes. Remove from the oven and let cool before icing.
